This December, Rubio’s Coastal Grill, the #1 fish taco brand, will reveal its new flagship location in the heart of Oceanside. Located at 4201 Oceanside Blvd., this site had been temporarily closed due to a 2021 fire. As the design team was planning to rebuild, they knew that the reopening for this popular location should reflect a uniquely creative design that reflects Rubio’s Baja roots. Inspiration came straight from the Baja taco stands where Rubio’s Co-Founder Ralph Rubio first experienced fish tacos during spring break as a college student 40 years ago.
The new Oceanside location is perfect for gatherings, happy hour, family meals and grabbing a quick meal to go. The interior design features Instagram-worthy wall décor and art, and showcases Ralph’s historic trips to San Felipe. Rubio’s flagship restaurant also features all-new patio seating, perfect for dining outdoors in the beachside town.
“Our goal in creating a flagship Rubio’s in Oceanside was to connect our signature Baja-inspired food, centered around our best-selling Original Fish Taco®, with laid-back, beach vibes reflective of the Baja lifestyle,” said Ralph Rubio. “We wanted to create a warm, distinctively Rubio’s dining experience for the supportive Oceanside community to come back, relax and enjoy. We can’t wait to welcome everyone.”
